Photographer's Note
Plov is the national dish of Uzbekistan. It is like a pilaf or pilav. Based on rice it is cooked in large cauldrons and includes lots of mutton (and mutton fat), carrots, chickpeas and raisins.
Vegetarians need not apply!
It is usually cooked for special occasions but this photo was taken at a specalist plov restaurant where everything is cooked outside. At this restaurant there were 6 or 7 versions being cooked.
We thought that the man on the right loved his plov!
