Photographer's Note
The roast pig industry in La Loma, Quezon City, the Philippines. One of the attractions of this district of Metro Manila are the stalls and stalls of roasted pigs in a spit and the cooking areas where you can see hundreds of roasted pigs being cooked. They cook the best lechon (litson) in the country.

Hi Ken,
This same scene is well known in my country, too, not for the industrial reasons, like this one, but for traditional and religious reasons (Christmas, Easter and other celebrations). Also, when we have a bigger familiar meeting, or when in the summer friends come to party, roast pig is the main dish, usually. Great you've posted this photo. Interesting and very unusual.

Hi Ken,
Crispy brown and smoky! Boy this makes me hungry..It doesn't look like they stuff the cavity with herbs like lemongrass, etc. And I have always thought that Cebu makes the best litson - now I know better. Hope all is well. Greetings! Danilo
