Photographer's Note

Time for a snack.....

Whether you’re enjoying an extravagant 'thali' of delicious and flavoursome curries, rice and bread or, delving into a crisp, spiced street samosa, food is always a prominent highlight whilst travelling through Rajashtan. We are always greeted by an astonishing display of roadside snacks from the teeming lanes of Jaipur to the dusty streets in the remote countryside. It is painfully hard to resist the smells and sights and tastes of this roadside food, prepared in front of customers.

Here is a very typical all-day street snack deep fried and crunchy, one of the most ubiquitous 'dhalvada' being prepared for sale at a market in a chaotic streets of Jaipur. The owner was so shy to have his picture taken by a stranger & I had to approach him twice before he agreed - not before I had a piece of the delicious piping hot deep fried spicy snack to gain his confidence.

For me sampling this street food is all a part of the travel experience
