Hi Marci!
Concerning the sky you can do following:
a) go to the channels and find the one with the biggest contrast
b) copy this layer (fpr instance the red channel)
c) CTRL+L and set the arrows in that way, that the photo looks almost black and white
d) select the white areas
e) select now all channels and add your new sky
