Hi Paul,
I see what you mean, but still it is something quite particular for me as well. In Poland the villages or towns end but not as abruptly as you say as here. Here there is a great contrast between extremely densely build town and the open space. I suppose people built so densely in the past for the protection to be inside the town walls. But now it feels a bit obsolete.
Very interesting observation illustrated with three different photos,

Not so long ago, Luis (adramad) showed a whole bunch of splendid pictures of Segovia.
These can really be a source of inspiration for a visit to Segovia.

You can also combine that city with a visit to Avila, reasonably close.
