Photographer's Note

Back to Belo Horizonte, an image that is part of my daily life, taken in the Central Market, very near home and the place where I work.

Canastra cheese is a type of Brazilian cheese produced in one of seven municipalities in the Serra da Canastra region of Minas Gerais: Bambuí, Delfinópolis, Medeiros, Piumhi, São Roque de Minas, Vargem Bonita and Tapiraí.

The climate, altitude, native pastures and the waters of Serra da Canastra give this cheese a unique flavor: strong, midly spicy, dense and full bodied. In May 2008, Canastra cheese was declared Brazilian Intangible Cultural Heritage, a title granted by IPHAN, the Institute of National Historical and Artistic Heritage.

Canastra cheese can be consumed fresh, cured or half cured, as the ones in the photo, with at least one week of maturation. As the days go by, it acquires a beautiful golden color and stiffens from the outside inward. It's good company for a cold beer, cachaça or red wine.
