Maple Hill Farm, near Lexington NY. The first snow has fallen, finally (very late this year) and the farmer is awaiting the maple Syrup season, which starts in late February or early March. This particular producer is my favorite, yieldng a rich and flavorful syrup that is superior to the kind that is available in supermarkets. The farmer and his wife are getting on in years, and it very hard work when the sap starts flowing. About 36 liters of sugar-maple sap will yield about 1 liter of syrup, after boiling it down. In the fall they give away the squash from their vegetable garden to their steady syrup customers. A true American tradition. The red oxide paint on the barns is a common sight in this part of New York State.
