Limoncello:
800 grams of sugar
1 liter of water
15 organic lemons
1 liter of alcohol 90°
Pour the liter of alcohol 90° in a hermetic bottle. Use a peeler to take the peels of the washed lemons, while taking care not to take the white which will give bitterness, and progressively put them in alcohol. Place the bottle in a dark and fresh place and let macerate during 40 days and stirring up the mixture each day. After 40 days, filter the decoction containing lemon. Make a sugar syrup on soft fire with the 800 gr. of sugar and water. Once the sugar syrup is cold, mix it with the lemon decoction. Put the solution obtained in hermetic bottles and conserve in a fresh and dark place during 30 days before tasting. When you want to drink Limoncello, put the bottle in the freezer before.
