Photographer's Note

- A palm wine "Recoltor" - The palm wine is obtained after fermentation of the sap of the oil palm tree. The sap is collected in bottles placed under notches made with the knife. Twice per day, the full bottles are replaced by the recoltor he climbs in top of the palm tree using a cord passed around the trunk and of his waist. The coldly collected sap is refreshing. Fermented once it is alcoholized and become celebrates it palm wine called "bunuk", 300.000 liters are produced each year, is the traditional drink of Diolas which they drink in group. Been useful in a terracotta bowl or a wood container drink the palm wine is tasted in turn, after the elder one which has the priority.
